Mexican Layered Casserole

Ingredients:

8 whole wheat tortillas

2 cups fat free refried beans

1 cup fat free sour cream

2 boneless skinless chicken breasts, cooked and shredded

1 cup low fat shredded cheese

1 cup chopped onions

1/2 cup low fat shredded cheese

1/2 cup fat free sour cream

shredded lettuce

1/2 cup salsa

 

Instructions:

Layer 2 tortillas, 1/2 cup refried beans, 1/4 of the shredded chicken, 1/4 cup sour cream, 1/4 cup chopped onions and 1/4 cup shredded cheese in a casserole dish.  Repeat 3 more times until first 5 ingredients are gone.

Spread 1/2 cup refried beans and 1/2 cup cheese on top of casserole and bake at 350 for 45 minutes or until cheese is melted and casserole is heated through. Top with shredded lettuce, remaining sour cream and salsa.

Makes 8 servings, 5 units each.
